Gut Check Batch Cooking

Learn how to cook 4 days worth of food in 1.5 hours.

Hi, I’m Stacey - former Navy Hospital Corpsman, personal trainer, teacher and currently a busy mom of two and owner of Gut Check Nutritional Therapy.

I struggled for 10 years with tummy troubles doctors couldn't identify, but I fixed them by changing my diet. I was feeling great, but then was faced with an enormous challenge three years ago, that changed the way I think about grocery shopping and cooking.

My shoulder had been bugging me for months and quickly progressed to the point where I was told I needed shoulder surgery.

My first thought was:

"SHIT, HOW AM I GOING TO COOK?"

I was scared. I didn’t eat out as restaurant food didn’t agree with me. For the time I was recovering from surgery, my meals were in my husband's hands (GASP!).

I knew I needed to simplify the meal-making process. I threw out the concept of recipes and meal planning....got organized and focused on the easiest, simplest way to get high quality ingredients from the store into the mouths of me and my family.

I call it Gut Check Batch Cooking.

My Gut Check Batch Cooking Course which I've taught in-person is now available online. Check out the video below for what we make in the course.

The secret to making Gut Check Batch Cooking work for you is:

1. purchase quality vegetables and meats

2. cook them in the simplest way possible - use no recipes

3. cook as much as you can at once - if your oven is on, fill it up!

4. store in dated containers for your family to assemble their own meals. They create the meals, you provide the healthy ingredients.

Here's what other Gut Check Batch Cookers say about what they've learned in my courses:

"Batch cooking is so much easier than I expected. Once I got into the rhythm, it's like a light went on and now I can't imagine making dinner every night. I have more time to play with my kids!" - Becky in Portland

"I love that I have this concept and handful of recipes in my back pocket for those crazy times in life when I am just not able to be Wonder Woman! It frees up time that I have to spend in the kitchen on weeknights allowing for more family time and for me that is a huge bonus!"- Amanda in Sacramento

In this course, I'll outline the equipment you need, food, how to prep it and store it.

Here's what we make in this course but you can modify the menu to fit your personal tastes. My goal is to demonstrate a framework and technique.

  • Beef Stir Fry
  • Coconut Rice
  • Broccoli Slaw
  • Apricot Chicken
  • Lemon and Dill Salmon
  • Roasted Carrots and Butternut Squash
  • Carrot and Butternut Squash Soup
  • Cashew Cookies
  • Pulled Pork
